Stuffed Acorn Squash. Packed with anti-oxidants, flavor and comfort without the sluggish feeling of rice, bread and potatoes.
Stuffed Acorn Squash
Ingredients
- 1 Acorn Squash 
- 2 TBSP. Olive Oil 
- 1 can Garbanzo Beans 
- 1 c. cooked Quinoa and Brown Rice 
- Pinch of ground Flax Seed 
- 1/4c.Green Onions 
- ¼ cup chopped walnuts 
- grilled zucchini, mushrooms, eggplant mixture 
Directions
- Preheat to 375°F and line a baking sheets with parchment paper. 
- Cut Acorn Squash in half and scoop out seeds (set seeds aside for later) 
- Add Olive Oil to edges of each Acorn Squash 
- Lay Acorn Squash face down on parchment paper. 
- Bake for 30 minutes 
- In the meantime mix garbanzo beans quinoa and brown rice, green onions, calabasa, mushrooms, eggplant and walnuts. Season to taste. 
- Once Acorn Squash is done, put each half in separate bowls. Spoon in mixture. Sprinkle with ground flax seed. Enjoy!
